Classic Salade Nicoise traditionally contains tuna, but this quick, easy, and tuna-friendly version uses chickpeas instead. And surely everyone has an open jar of Dijon mustard -or some leftover deli packets of yellow mustard -just waiting to be used up in this salad!

Ingredients:
One 15-ounce can cut green beans, drained
One 16-ounce can diced white potatoes, drained
One 14.5-ounce can diced tomatoes, drained
One 15.5-ounce can chickpeas, drained (and rinsed, if possible)
One 4-ounce can pitted black olives, drained
¼ cup olive oil
1 ½ tablespoon white balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon dried basil
¼ teaspoon salt
Freshly ground black pepper

Directions:

1. In a large bowl combine beans, potatoes, tomatoes, chickpeas and olives.

2. In a small bowl whisk together the remaining ingredients and add to the first mixture in the large bowl. Toss gently to combine. Adjust seasonings to your tastes.

Serves: 4
